On a Tuesday in June, just before 7 p.m., Jesus Del Rosario and Ashley Cantu arrived at the Midtown yakiniku restaurant Niku X to find out. The couple checked in with a host beside four brightly lit refrigerators filled with meat slabs labeled “pure wagyu,” and then made their way to a vestibule upstairs. It was the night before Ms. Cantu’s 20th birthday, and for $158 per person, the couple had been promised an endless procession of luxury.
