Niku X is looking for a skilled and experienced butcher. The butcher/meat cutter positions are one of the most important positions we have in executing accurate prep with consistency and quality control to ensure that every guest has a memorable meal. As a butcher, you will be executing the portioning and breaking down sub-primals into various cuts of meat. ESSENTIAL QUALIFICATIONS:
  • Ability to communicate verbal and written English with management and co-workers.
  • Ability to maintain complete knowledge of the following:
    • All cutting techniques which are required.
    • All menu and special items, their preparation method/time, all ingredients and quality standards, taste, appearance, texture, temperature, garnish and method of presentation.
    • Correct maintenance and use of food serving and preparation equipment.
  • 2 years experience as a butcher.
  • Food Handlers Card
DESIRABLE QUALIFICATIONS:
  • Yakiniku (Japanese BBQ) experience is a plus
  • High School graduate.
  • Any previous culinary training.
  • Certification in sanitation requirements.
ESSENTIAL JOB FUNCTIONS:
  • Sharpen and adjust cutting equipment
  • Receive, inspect, and store meat upon delivery
  • Cut, bone, or grind pieces of meat
  • Weigh, wrap, and display cuts of meat
  • Cut or prepare meats to specification or customer’s orders
  • Store meats in refrigerators or freezers at the required temperature
  • Keep inventory of meat sales and order meat supplies
  • Twice daily checking of dry age room humidity and room temperature
  • Rotation of dry aged products and detailed logging of product
  • Logging of weights of product along with tracking of waste and portioning
  • Clean equipment and work areas to maintain health and sanitation standards:
  • Complete opening and closing duties as assigned, including the following:
    • Set up the physical aspect of the station.
    • Make a preparation list of necessary food items.
    • Requisition all listed food items and transport from walk-in, etc. to assigned station.
    • Check the quality and quantity of all stock and supplies.
    • Ensure cleanliness and condition of assigned station.
  • Follow the supervisor's instructions.
  • Follow the maintenance program and cleaning schedule.
  • Alert Chef or Sous Chef as to any deficiencies of food items.
  • Notify management of any pertinent information related to shift activities.

  • Performs with a sense of urgency to foresee clients needs and support FOH team members all times.
  • Effectively, communicates with Management and FOH team members to rectify any and all requests, comments, or incidents occurring between client’s and FOH Team as a whole.
  • Ensures that assigned sections/stations, side station, tables, and POS stations are well cleaned as company essentials and well stocked all necessities at all times for per shifts.
  • Consistently, work with the FOH team to ensure products and items are maintained at established par levels.
  • Adheres all company established guidelines, procedures, policies, rules, and safety regulations.
  • Maintain or must be able to provide an energetic, upbeat, and upscale atmosphere at all times give welcoming and warm feelings to clients and all FOH and BOH team,
  • Ideally, servers will be required to engage and interact with Clients’ in tactful, knowledgeable, and professional manner.
  • Continually check stations before and after shift for proper set-up and cleanness of all items.
  • Greet the Clients’ in a genuine and courteous manner and explain any specials and/or company events and promotions for Clients’ awareness.
  • Appropriately record the details of the orders/requests from the clients’, up-selling, repeating the orders to the clients’ to check for exactitude.
  • Accurately input the orders in the POS in impeccable compliance with Management protocol in order to inform the BOH/Kitchen of the relevant details in the order being placed/situated.
  • When the order is completed, receive the order from BOH/Kitchen, confirm its exact destination, deliver it to Clients’ along with proper tools and appropriate side items.
  • Accordance from all States liquor regulations.
  • Constantly, replenish beverages as necessary and check with all client’s for overall satisfaction of dining experiences.
  • Ensure to market and serve upon clients’ request of any dessert items or specialty beverages for future references.
  • Continually monitor clients’ satisfaction and present checks in an appropriate manner, price check per company procedures.
  • Perform other related duties as assigned.
